Ingredients Serves 4 to 8

500g minced beef (Vegetarian option - red lentils)

2 x medium onions, diced

A little veg or olive oil

4 white bread rolls or slices (you can use up old bread)

1 x cup milk (plant based if preferred)

½ cup raisins

MAT* chilli chutney

5 to 10ml MAT South African Curry Mix

Salt to taste

Bay Leaves to decorate (optional)

Preparation

Soak the rolls or bread in the milk before preparing the other ingredients

Squeeze all the milk out of the bread rolls/slices and set aside both milk and mushy bread

Place a sauté pan on medium heat with a dash or two of vegetable oil and add the diced onions. Stir fry for a minute or two till coated in oil then add the beef mince

Stir fry beef mince continuously until it is brown all over - 5 to 6 minutes

Now add the mushy bread, South African curry mix, raisins, MAT chutney and the remaining milk to the mince and mix in well.

Turn the mixture into a greased casserole dish and decorate with whole bay leaves

Bake at 180oC for 30 to 40 minutes till set.

Serve hot with cooked Malawi Kilombero or other rice and vegetables for an authentic taste of South Africa Maggie style.
