Potato and Pea Curry

POTATO AND PEA CURRY

 

For a sweeter tasting curry use fresh peas if available instead of frozen peas.

 

Ingredients

 

45ml cooking oil                                     1 onion, thinly sliced

500g potatoes, peeled and cubed           5ml chilli powder (to taste)

1x 200g tube tomato puree                    10ml South African curry mix

Salt to taste                                           125ml frozen peas

1 green pepper seeded and sliced          200ml water

Chopped coriander leaves for garnishing.

 

Serves 4

 

Method

  1. Heat oil in a large saucepan and stir fry the onions until golden brown
  2. Add the cubed potatoes and fry for 5 minutes
  3. Stir in chilli powder and South African curry mix and fry for about 2 minutes
  4. Add tomato puree, salt, peas and green peppers and stir well
  5. Cover and cook over a moderate heat for about 2 minutes, then stir in the water
  6. Cook until the potatoes are tender
  7. Garnish with chopped coriander leaves for garnishing and serve with rotis or boiled white rice.
